Although I get tired of roasting 100 pounds of leek a week, I still love them.
Here's a simple recipe:
Take a bunch of leeks, cut off the bottom (about 1/8 - 1/4"). Slice vertically through the whole stem and rinse under cold water, unfolding each leaf to get rid of grit and sand. Cut off most of the green part and wrap in plastic. (Freeze them and use for flavoring in your next soup.)
Saute whole leeks in a sauce pan with a little butter, until slightly golden. Pour approximately 1/4 cup of sake and braise leeks. When liquid is gone, add more and continue process until leeks are soft and fully cooked. Add with favorite protein on your plate.
A simple, clean addition to any meal!
